This vegan chocolate mousse is unbelievably smooth, thanks to silken tofu, and naturally sweetened with maple syrup. It’s rich in plant-based protein, packed with antioxidants from dark chocolate, and finished with a sprinkle of flaky sea salt for the perfect balance of flavors.

What You'll Need

  • 1 (12-14 oz) package silken tofu (soft or firm silken, not regular tofu)

  • ½ cup dark chocolate (melted, at least 70% cacao)

  • ¼ cup maple syrup (adjust to taste)

  • 2 teaspoons pure vanilla extract

  • 2 tablespoons coconut cream or almond milk (for extra creaminess)

  • ¼ teaspoon flaky sea salt, plus more for topping

  • optional: ½ teaspoon espresso powder (enhances chocolate flavor)

How to Make It

Step 1

Melt the chocolate: In a small saucepan or microwave, gently melt the dark chocolate until smooth. Let it cool slightly.

Step 2

Blend: In a high-speed blender or food processor, combine silken tofu, melted chocolate, maple syrup, vanilla extract, coconut cream (or almond milk), sea salt, and espresso powder (if using). Blend until completely smooth and creamy.

Step 3

Taste & Adjust: Check sweetness—if needed, add a little more maple syrup and blend again.

Step 4

Chill: Transfer the mousse into serving cups and refrigerate for at least 30 minutes to thicken and develop flavor.

Step 5

Serve: Sprinkle with extra flaky sea salt and top with cacao nibs, fresh berries, or shaved dark chocolate before serving.
