This DIY method produces a rich, flavorful extract that rivals store-bought versions. By continuously replenishing the jar with fresh vodka, you’ll always have a steady supply of high-quality vanilla extract for your baking and cooking needs.
When following this method, your vanilla extract can last indefinitely! If the flavor weakens over time, replace the old vanilla beans with fresh ones. Don’t toss the used beans—once dried, they can be added to granulated sweeteners (such as cane sugar or maple sugar) to infuse them with a lovely vanilla aroma.
What You'll Need
Equipment:
1 quart-size (32oz) glass jar with a tight-fitting lid
1 pint-size (16oz) glass bottle with a tight-fitting cap (for decanting)
Ingredients:
12 whole vanilla beans, cut in half and split lengthwise
Approximately 1 ½ quarts (1.4L) vodka
How to Make It
Step 1
Prepare the Vanilla Beans: Add the split vanilla beans to the clean quart-sized jar.
Step 2
Fill with Vodka: Pour vodka over the beans, leaving about 1 inch (2.5cm) of space from the top. Secure the lid tightly.
Step 3
Steep: Store the jar in a dark pantry or cabinet for at least 6 months, shaking it occasionally.
Step 4
Decant: After 6 months, pour half of the vanilla extract into the pint-sized bottle and seal it.
Step 5
Refresh: Refill the original jar with fresh vodka, maintaining the 1-inch headspace. Return it to the pantry to continue steeping.
Step 6
Repeat: Every 6 months, repeat the decanting and refilling process to keep your vanilla extract continuously flavorful.
